Preparation: 15 minutes Baking time: 30 minutes
- *A Tajine maadnous is a traditional Tunisian dish, a kind of flan or giant omelette eaten hot or cold. For snacks cool in the fridge then cut into cubes, insert a toothpick and enjoy.
Ingredients:
4 eggs 1 chicken breast 1 onion 2 garlic cloves 1 grated carrot 1 grated courgette 1/2 chicken stock cube 3 tablespoons chopped fresh coriander a handful of babyspinach 1/2 teaspoon turmeric 1/2 teaspoon cumoin salt and pepper
- Cut your chicken into small pieces and crush your garlic cloves. Dissolve your stock cube in 3 tablespoons of boiling water.
- Place non stick wok or frying pan over a high heat, add your chicken stock, when it boils add your chicken and saute for 2 minutes, add your grated carrot and courgette, add your cumin and turmeric and cook for a further 5 minutes, then add your spinach leaves until they wilt. Add salt and pepper.Beat your eggs and add a little salt and pepper. Place your chicken and vegetables in a Tajine or shallow baking dish and pour over your egg mixture.
- Place in the oven for 30 minutes or until the top is brown.
- Laissez refroidir, puis coupez en cubes et placez sur un plat.
- Insérez dans chaque cube de tajine, un cure dents et recouvrez délicatement d’un film ( au-dessus des cure-dents) avant de placer votre plat au frigo.
*Vous pouvez aussi mélanger tous vos ingrédients aux oeufs pour faire une très grande omelettes, que vous roulerez , puis découperez comme sur la photo.
